Kale (blanched to bright green) + beets (boiled to just tender & peeled.) Chopped and cubed.
Plus a balsalmic vinaigrette. Mix all of the ingredients below.
4 T. Balsamic vinegar
2 t. Dijon mustard
1 t. dried thyme or 2 t. fresh
1 small red onion, thinly sliced
1/2 C. virgin olive oil
1/2 t. salt (or to taste)
